Ingredients

1 can (15 oz) chickpeas, rinsed and drained

1½ cups cherry tomatoes, halved

½ cucumber, diced

¼ small red onion, finely sliced

2 tbsp fresh parsley or dill, chopped

2 tbsp extra virgin olive oil

1 tbsp fresh lemon juice

½ tsp salt

¼ tsp black pepper

Optional: ¼ tsp red pepper flakes or diced avocado

Instructions

  1. In a large mixing bowl, add the drained chickpeas, halved cherry tomatoes, diced cucumber, and sliced red onion.
  2. Drizzle with olive oil and lemon juice.
  3. Sprinkle in salt, pepper, and optional red pepper flakes.
  4. Add chopped parsley or dill and gently toss everything to combine.
  5. Taste and adjust seasoning as needed.
  6. Serve immediately or chill for 15–30 minutes to let flavors meld.
