1 can (15 oz) chickpeas, rinsed and drained
1½ cups cherry tomatoes, halved
½ cucumber, diced
¼ small red onion, finely sliced
2 tbsp fresh parsley or dill, chopped
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
½ tsp salt
¼ tsp black pepper
Optional: ¼ tsp red pepper flakes or diced avocado
Instructions
- In a large mixing bowl, add the drained chickpeas, halved cherry tomatoes, diced cucumber, and sliced red onion.
- Drizzle with olive oil and lemon juice.
- Sprinkle in salt, pepper, and optional red pepper flakes.
- Add chopped parsley or dill and gently toss everything to combine.
- Taste and adjust seasoning as needed.
- Serve immediately or chill for 15–30 minutes to let flavors meld.
