Ingredients
4 large bell peppers (red, yellow, green, or orange)
½ lb ground beef or turkey
1 cup cooked rice or quinoa
½ onion, diced
2 cloves garlic, minced
1 cup tomato sauce
½ cup shredded cheese (optional)
1 tsp paprika
½ tsp cumin
½ tsp oregano
Salt & black pepper to taste
Instructions
1️⃣ Prepare the Peppers – Preheat oven to 375°F (190°C), cut off the tops, remove seeds, and pre-roast for 10 minutes.
2️⃣ Cook the Filling – Sauté onions and garlic, brown the ground meat, and mix in rice, tomato sauce, and spices.
3️⃣ Fill & Bake – Stuff peppers with the mixture, top with cheese, and bake for 25-30 minutes until tender.
4️⃣ Serve Hot – Garnish with fresh herbs, sour cream, or extra tomato sauce.
