Ingredients

- 2 boneless ribeye, sirloin, or hanger steaks
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 sprig fresh thyme or rosemary
🍟 For the Frites (French Fries):
- 3 large russet potatoes (or Yukon Gold)
- Vegetable oil for frying
- 1 teaspoon salt
- ½ teaspoon garlic powder (optional)
🥣 For the Sauce (Optional):
- Béarnaise sauce
- Peppercorn sauce
- Garlic butter sauce
Instructions
1️⃣ Season the steak with salt and pepper.
2️⃣ Sear in a hot cast-iron skillet with olive oil, cooking for 4–5 minutes per side for medium.
3️⃣ Baste with butter, garlic, and thyme in the last minute.
4️⃣ Rest for 5–10 minutes before serving.
1️⃣ Peel and cut the potatoes into thin fries.
2️⃣ Soak in cold water for 30 minutes to remove excess starch.
3️⃣ First fry: Cook at 325°F (165°C) for 3–4 minutes, then drain.
4️⃣ Second fry: Increase heat to 375°F (190°C) and fry until golden brown.
5️⃣ Season immediately with salt and optional garlic powder.

✅ Add béarnaise, peppercorn, or garlic butter sauce for extra flavor.
✅ Serve with a fresh salad or roasted vegetables for balance.
