2 English muffins, split and toasted
4 slices Canadian bacon
4 large eggs
1 teaspoon white vinegar
½ cup unsalted butter, melted
3 egg yolks
1 tablespoon lemon juice
Salt and cayenne pepper, to taste
Instructions
- Toast the muffins until golden brown.
- Sear the Canadian bacon in a pan over medium heat for 1 minute per side.
- Poach the eggs in simmering water with vinegar for 3-4 minutes.
- Blend the hollandaise sauce by combining egg yolks, lemon juice, and melted butter.
- Assemble: Place bacon on muffins, add poached eggs, and drizzle with hollandaise.
