2 cups powdered sugar

¾ cup sweetened shredded coconut

2 tablespoons sweetened condensed coconut milk

½ teaspoon vanilla extract (alcohol-free)

1 ½ cups semi-sweet or dark chocolate chips

½ cup unsalted roasted peanuts, finely chopped

1 tablespoon coconut oil (optional)

¼ teaspoon almond extract

1 tablespoon freeze-dried cherry powder or beet powder (for color)

Instructions

  1. Make the filling: Mix chopped cherries, powdered sugar, coconut, condensed milk, and extracts in a bowl. Stir until thick and moldable.
  2. Shape: Roll into 1-inch balls. Place on parchment-lined tray and refrigerate for 30 minutes.
  3. Melt chocolate: In a double boiler or microwave-safe bowl, melt chocolate chips and coconut oil. Stir in chopped peanuts.
  4. Dip and chill: Coat each cherry ball in chocolate-peanut mixture. Return to tray and let set at room temperature or chill until firm.
