1 tbsp milk (optional)

Salt and pepper to taste

1 tbsp butter or ghee

¼ cup shredded cheese (cheddar, Emmental, or Gruyère recommended)

Optional garnish: chopped chives, parsley

Instructions

  1. Crack the eggs into a bowl, add milk (if using), salt, and pepper. Whisk vigorously until foamy.
  2. Heat butter in a nonstick skillet over medium-low heat.
  3. Pour in the eggs and swirl the pan to distribute evenly.
  4. As the edges set, gently lift them with a spatula, allowing uncooked egg to flow underneath.
  5. Once the omelette is nearly set but still slightly glossy on top, add shredded cheese in the center.
  6. Fold the omelette gently in half and cook for another 20–30 seconds until the cheese melts.
  7. Slide onto a plate, garnish with herbs, and serve immediately.
