3 large eggs
1 tbsp milk (optional)
Salt and pepper to taste
1 tbsp butter or ghee
¼ cup shredded cheese (cheddar, Emmental, or Gruyère recommended)
Optional garnish: chopped chives, parsley
Instructions
- Crack the eggs into a bowl, add milk (if using), salt, and pepper. Whisk vigorously until foamy.
- Heat butter in a nonstick skillet over medium-low heat.
- Pour in the eggs and swirl the pan to distribute evenly.
- As the edges set, gently lift them with a spatula, allowing uncooked egg to flow underneath.
- Once the omelette is nearly set but still slightly glossy on top, add shredded cheese in the center.
- Fold the omelette gently in half and cook for another 20–30 seconds until the cheese melts.
- Slide onto a plate, garnish with herbs, and serve immediately.
