2 chicken breasts (boneless, skinless)
1 tbsp olive oil
1 tsp Cajun seasoning
½ tsp salt & black pepper
4 oz cream cheese (softened)
½ cup shredded cheddar or pepper jack
¼ cup chopped bell peppers
1 clove garlic (minced)
½ tsp smoked paprika
Instructions
- Butterfly the chicken breasts and season with Cajun seasoning, salt, and pepper.
- Make the filling – Mix cream cheese, shredded cheese, bell peppers, garlic, and paprika.
- Stuff the chicken with the mixture and secure with toothpicks.
- Cook using your preferred method:
- Oven: Sear, then bake at 400°F for 18-20 minutes.
- Pan-Seared: Cook on medium heat for 5-6 minutes per side.
- Air Fryer: Cook at 375°F for 12-15 minutes, flipping halfway.
- Rest for 5 minutes, garnish with parsley, and serve!
